An elegant blend of mostly Chenin Blanc, sourced from 5 different sites in the Swartland. It has a lovely, pure nose of apple, apricot, and citrus, and a textured and nicely balanced palate. Delicious, drinkable and food-friendly.

Tasting notes/pairing options: Elegant and pure nose that combines apple, apricot, citrus, hazelnut and floral notes. Concentrated and nicely balanced, with very good acidity and a pleasant finish.

The viticulture/the winemaking:

 Vineyards are farmed organically with minimal intervention. Vines are mostly dry farmed bush vines. All grapes were handpicked in the early morning during cooler weather, placed into lug boxes (smaller quantities mean reduced compaction and damage to the fruit) and then moved to cellar. Grapes are fermented with natural yeast, half in stainless steel at 14 degrees Celsius, and half in older 300 litre barrels. 15% of grapes were whole bunch fermented and spent 4 weeks on the skins. Wine ages for 12 months on the gross lees, after which it is blended and bottled without fining or filtering.

We are a close family business and are currently in our second generation. We are based on our natural lavender farm, Yorkshire Lavender in the North Yorkshire countryside.

With a member of our staff, Timi, a trained sommelier; it seemed crazy to let that enthusiasm and experience go to waste.

Wine starts in the ground! Just like lavender the correct soil, conditions and care are vital to grow excellent grapes to make exceptional wine.
